        <p>To know me is to know I love cheese. In fact, my friend <a href="http://sweetsavorysouthern.wordpress.com/">Renea</a> sent me this mug a while back and it pretty much sums up my daily life:</p>

<p><br />So, when I got an email regarding sampling <a href="http://iledefrancecheese.com/index.html">Ile de France</a>&#160;cheese, I was all over it. I had my choice between camembert, brie, and goat. Now, even though goat is my favorite of the bunch, I decided to go with the camembert because it&#39;s a cheese I don&#39;t really eat all that often and, come to think of it, I don&#39;t think I have ever bought.<br />&#160;</p>

<p>Camembert is a very mild cheese and it has some nuttiness to it. I would say it is similar to brie in taste and texture (though it has some more punch than brie). It&#39;s creamy and, while it&#39;s probably &quot;better&quot; to just eat it at room temperature and not necessarily cook with it, there are few things I like better than a nice, melty cheese. Mmm. So, I decided to use it in one uncooked application and 2 cooked dishes (and, of course, I ate some on its own).</p>

<p>This <a href="http://iledefrancecheese.com/products_camembert.html">Ile de France camembert</a>&#160;was delicious! It&#39;s got a fabulous texture and just enough flavor that it lends itself to many pairings, but can stand on its own, too. I&#39;m hoping to order some of the goat cheese next!</p>
<p><br />Now, onto the dishes!</p>
<p>First, I used it in a porcini risotto. I think the slight nutiness of the cheese pairs well with the earthiness of the mushrooms. Plus, I will take any chance I get to make risotto since we don&#39;t eat it all that often. This was so good that I think I may make it again next week! </p>

<p><br /><strong><span style="FONT-SIZE: 1.25em">Porcini and Camembert Risotto<br /></span></strong><em>Serves&#160;2 as a main dish</em></p>
<p>1 (1.5 oz.) package dried porcini mushrooms<br />1.25 cups boiling water<br />1 Tbsp. extra virgin olive oil<br />1 large shallot, diced<br />2 cloves garlic, minced<br />3/4 cup arborio rice<br />2 sprigs thyme<br />1/3 cup dry white wine<br />4 cups chicken or vegetable broth, kept warm on the stove<br />2 oz. Camembert<br />1 Tbsp butter<br />salt and pepper</p>
<p>Place the porcini mushrooms in a bowl and then add the boiling water. Allow the porcinis to reconstitute for about 15 minutes. Strain them, reserving the water you used, and chop the mushrooms.</p>
<p>Heat a large, heavy bottomed pan over medium heat and add the olive oil. Once shimmering, add the shallot and cook until translucent. Add the garlic and cook for about 30 seconds before stirring in the rice, chopped porcini, and thyme. Stir the mixture so that the rice is coated with the oil and begins to toast slightly.</p>
<p>Add the wine and deglaze, allowing nearly all the wine to evaporate. A ladel or so at a time, add the porcini liquid and the broth, alternately,&#160;stirring continuously and allowing the rice to absorb most of the liquid before adding the next ladel.</p>
<p>Continue adding the porcini liquid and broth a ladel&#160;or so at a time, stirring, until the rice is cooked al dente. It should still be slightly firm to the bite, and&#160;it should&#160;be a little &quot;loose.&quot; You&#39;re not looking for a rice type dish that has absorbed ALL its liquid. There should be some liquid still in the&#160;pan.</p>
<p>Remove the pan from heat and&#160;stir in the camembert and the butter.&#160;Season to taste with salt and pepper if necessary and serve immediately (as if you could wait!).</p>
<p>&#160;</p>
<p>Next, I made a simple salad. This is an <strong>endive salad with toasted walnuts,&#160;room-temp camembert, sliced apples (use your favorite kind) and cider vinaigrette.</strong> I like my dressings more acid-y than most, so I do equal parts apple&#160;cider vinegar &amp; olive oil.&#160;(I also added pressed garlic and salt and&#160;pepper, of course.) As&#160; you know, I am working on having the love for fruits with savory dishes and this one won me over. Delicious!&#160;To let the apples absorb the flavor, and to keep them&#160;from browning, add the sliced apples to the dressing as you prep the rest of the salad. </p>

<p><br />And, finally, I made some <strong>camembert and maple bacon cups</strong> because the only thing better than cheese is cheese and bacon. For this I just chopped and&#160;cooked some bacon.&#160;I mixed just a tiny bit of maple syrup into the cooked/drained bacon and filled pre-made phyllo cups with that and the camembert. Easy and delicious!</p>

 <div><br />This is by no means haute cuisine, but boy oh boy, is it delicious. I give all the credit of this ingenius creation to B. If he ever decides to change careers, Taco Bell would be foolish not to bring him aboard as a food conceptor. That boy comes up with some excellent gourmet junkfood. A taco and a burger in one. What&#39;s not to love right? Here&#39;s how it works... spread some refried beans on both ends of a toasted hamburger bun. My taco &quot;meat&quot; was chopped baby bellas, onions and corn seasoned with cumin and chile powder. Now layer &quot;meat&quot;, cheddar cheese, tomatoes, avocado slivers and a fried corn tortilla. Top with your bean slathered bun and serve with plenty of salsa and Tapatio.  <div>&lt;-- <strong>currently reading.</strong> second chapter and i&#39;m already addicted. it&#39;s about a socialite named grady, living in a flat in new york city. i really like it. (:<br /><br />as i read this book, it&#39;s making me think of how fast summer has passed by and how little i&#39;ve done in that time. no summer homework, not enough exercise, not enough crafting, not enough anything. i&#39;m almost to 50 etsy sales, and i&#39;m positive that by the end of the year i&#39;ll have 100, but i wish i could do better. i need to do better is more what i should be saying. i have so many books i&#39;ve taken out of the library all summer and i&#39;ve only read 1. i&#39;ve read parts of 2 and am really reading the one i&#39;m on now, but i want to&#160; have read at least 7 books by the end of the summer, and it shouldn&#39;t be as hard as it has been. i just need to bring my focus back to where it was in june. less flab, less fat in general. i&#39;m just getting so worried that this summer is going by too quickly for me to keep up with it. i need to achieve more quicker or my life will pass me by so fast i won&#39;t even notice it going. <br /><br />i&#39;m cleaning out my room. essentially, getting rid of stuff&#160; and keeping what matters. i&#39;m throwing away my past and living in the present, with the exception of some old journals, but that should be agreeable. i&#39;m almost finished. i love redecorating, making my room more spacious and continuing to collage my ceiling. i&#39;m becoming more and more agitated with everyday, and i&#39;m seriously considering therapy. i just need a boost of some kind. everyone needs a lift, but nothing i used to do works anymore. i need more ideas. i remember having the biggest burst of happiness when i went vegan. the restriction made me realize my freedom, but i couldn&#39;t live that way. vegetarian is the life for me, and i&#39;m living it, but i need something more. i need to sort things out and be sure of things i&#39;m unsure of. i need someone to sort it out with that&#39;s used to that, you know? as much as writing can help, i just want to know if i&#39;m seriously having a problem. i tire of things and people too easily and i fear it sometimes. people aggravate me, but what if i eventually end up with no people at all? i don&#39;t know. tonight i&#39;m going to make an exercise plan and this time i&#39;m going to put everything into it... or i should just kick myself in the ass.<br /></div>   <p style="clear:both;">

        <p>My silly S.O. Thinking I was going to cook dinner. Just because he&#39;s sick. And because, let&#39;s face it, I usually do. Couldn&#39;t he appreciate that watching Pretty in Pink and Some Kind of Wonderful was much more important. Plus I was busy, laptop on lap, working away, with only ONE eye on the TV. So, get that cooking idea right out of your head, mister.</p><p>Well, OK, truth be told: We only saw the last 15 minutes of Pretty in Pink (raise your hand if you think that pink prom dress is the most unflattering sack ever) but we did watch all of Some Kind of Wonderful. What a silly silly movie, really, it actually makes no sense at all.</p><p>And in fact I did get up, during one of the many silly, silly montages, and throw something very quick and easy together. But frozen food and microwaves were involved.</p><p>Breakfast:<br />Organic &quot;Cheerios&quot; with organic Sugar and Rice Milk</p><p>Lunch:<br />Leftover Seitan Stew<br />Iced Soy Latte</p><p>Snack:<br />Macadamia Nuts</p><p>Dinner:<br />Trader Joe&#39;s Penne Arrabiata, with some added Organic Peas, Garlic and Basil<br />Trader Joe&#39;s Soy Creamsicles (Have you seen these?         <p>Why mess with a good thing? If you&#39;re willing to dirty up a pan (and let&#39;s face it, we all know I&#39;m not always ready to do such a thing) then you&#39;re ready to make a good old-fashioned clean-out-your-fridge stew. And I&#39;ve been making those a lot.</p><p>What they all have in common:</p><p>1. Organic Brown Rice (the microwave-in-a-bag-three-minute kind)<br />2. Some protein source...usually seitan, but can also be one of the now many brands of &quot;chicken&quot; or &quot;steak&quot; strips out there. It can even be soy crumbles, although i tend to save those for either pasta dishes or Mexican dishes.<br />3. Some combination of fresh and frozen vegetables<br />4. Nutritional Yeast...which makes it very savory and creates the gravy that pulls it all together. (In fact Nutritional Yeast is such a wonder ingredient that I&#39;ve discovered you can mostly just use water if you need more liquid...no broth or rice milk or more oil required.)</p><p>Saturday night I wanted to continue using the Spinach and Bok Choy I had on hand, and by throwing in some frozen peas that I microwaved a bit, it had a very green-themed dinner. In addition to being pretty, of course it had lots of iron using those dark leafy greens. I even restrained myself from eating the whole thing, so I could have some for lunch on Sunday. That took discipline, I must say.</p><p>Breakfast:<br />Organic Corn Flakes, Organic Sugar, Rice Milk</p><p>Lunch:<br />2 slices of Sourdugh Bread with Soy Margarine and Avocado</p><p>Dinner:<br />Seitan Stew with Olive Oil, Garlic, Bok Choy, Spinach, Peas, Leek, Garlic, Seitan, Organic Brown Rice and Nutritional Yeast<br />1 ear of Corn<br />Chery-Chocolate Chip Soy Cream</p>    <p style="clear:both;">

 <div>I felt something was missing from my <a href="http://yeehawmurghi.vox.com/library/post/tandoori-salmon-and-chana-dal.html">Tandoori Salmon &amp; Chana Dal</a> the other day... So I decided to try do something about it, with the leftovers. I chopped up and sautéed 3/4 of a leftover onion, halved some cherry tomatoes and threw them in also, along with a few drops of soy, and Sriracha hot-sauce. Then, I added the chana dal, just to get it warmed up. It turned out absolutely great. I couldn&#39;t be more pleased with this. <br /><br />It&#39;s a damn funny thing, cooking. You struggle for a years, trying to get a recipe right, and then suddenly you stumble onto something like this, that you get absolutely right, almost by accident. <br /></div>   <p style="clear:both;">

        <p>The first time I tried polenta, it was out of those supermarket tube shaped packages, disappointingly bland, barely rescued by our spicy marinara. <br /><strong>Broccoli Polenta cakes</strong> (recipe adapted from the smashing Veganomicon)</p><p>- 1 cup stone ground coarse polenta<br />- 3 and 1/2 cups water<br />- salt and fresh black pepper to taste<br />- 1 cup broccoli, chopped fine ( I used frozen)<br />- 2 oz Queso Fresco</p><p>- Bring the water to boil in a heavy saucepan. Slowly pour in the polenta, stirring constantly with a whisk.<br />- Add the broccoli, salt and pepper.<br />- Lower the heat to a simmer and keep stirring for 10-15 minutes until it thickens to creamy pudding consistency. (Be careful of hot splatters.)<br />- Cover and turn off the heat. Let it rest for ten minutes, until it is thick enough to be picked up on a flat spatula.<br />- Pour the polenta into greased muffin pans and cool. (Silicone pans are perfect for this..don&#39;t even need greasing.)<br />- Once cooled, turn over on a foil-lined baking sheet, crumble half the queso on top and place under the broiler until the cheese turns golden.</p><p><strong>Sun-dried tomato cilantro pesto</strong></p><p>- 1/2 cup sundried tomatoes<br />- 1 cup boiling water<br />- 1/4 cup almonds, ground<br />- 1/2 cup cilantro, packed<br />- 2 tbsp lemon juice<br />- salt and pepper to taste</p><p>- Soak the tomatoes in boiling water for ten minutes. Then, grind everything together in a food processor or blender.</p><p>Serve the polenta over the pesto, with roasted vegetables on the side, and more crumbled queso for garnish. I broiled a couple of zucchinis, tossed with olive oil, salt, pepper, oregano and vinegar, on the same tray with the polenta.</p><p><br />

        <p>I&#39;m not sure if Taco Night is still in the American dinner repertoire, but Meghan and I tried our hand at it for the first time in a few years recently. (Upon googling &quot;taco night&quot; I found <a href="http://www.theonion.com/content/opinion/son_youve_made_a_mockery_of">this Onion piece</a>, making me believe taco night is alive although potentially not well.) </p><p>Below is what was on the menu</p><p>Black beans<br />Spanish brown rice<br /><a href="http://bourgeoisbee.vox.com/library/post/roasted-tomato-jalapeno-salsa.html">Roasted tomato &amp; jalapeno salsa</a><br />Smashed sweet potatoes<br />Grilled cactus<br />Corn tortillas (toasted)<br />Cabbage (julienned) <br />Tomatoes (diced)<br />Vidalia onions (diced)<br />Scallions (sliced)<br />Chives (chopped)<br />Cilantro (chopped)<br />Avacado (sliced)<br />Queso fresco<br />Soy milk horchata  </p><p>Thats quite a spread, but most of it just involves a little slicing or dicing and other appliances, such as a slow cooker and rice cooker can help make it easy and fool proof, but aren&#39;t necessary.</p><p>Black Beans<br />The day before I rinsed and sorted a 1 lb bag of black beans and then let them soak overnight in a large Pyrex bowl.</p>

I cooked the beans the easy way; in the slow cooker. Just cover them with water, throw in some salt and anything else you want, such as onions or garlic, set to low and they&#39;re ready in 6-8 hours.</p><p>Spanish Brown Rice<br />I started off by caramelizing half an onion followed by a couple cloves of garlic in a cast iron skillet and then added 2 C of brown rice to toast for a few minutes. While that was toasting I went to the window sill herb garden and grabbed a sprig of oregano, removed the leaves and chopped them as well as some tomato. Then to make my life easy I just put everything in the rice cooker with 4 C of &quot;second&quot; stock and let it do the hard work.</p><p>Sweet Potatoes<br />While the rice and beans are cooking in their respective appliances, now is the perfect time to scrub a few sweet potatoes, toss them in a little olive oil, salt and pepper, wrap them in foil and toss in the oven at 400F for 45-60+ minutes, until soft. I used smaller sweet potatoes so they would be done around the same time as it takes to cook the brown rice, about 45 minutes. When cool enough to handle, remove the skins (optional), mash and double check the seasoning. Other herbs and spices can be added to these as well, especially if served as a side dish, but since there were so many other flavors crammed into each taco I kept it simple and didn&#39;t muddle with the complexity the roasted sweet potato already brings. When they are done keep the oven on to heat the tortillas, or you can use the pan that you toasted the rice in as well.</p><p>Soy Milk Horchata<br /><div>While I was getting everything ready I got the inspiration to make soy milk horchata. Instead of extracting the &quot;milk&quot; from rice I started with soy milk and added the flavors common to horchata. I&#39;ve never heard of this variation, so I looked up a few horchata recipes and tasted as I went. I started with 4 C of soy milk in a sauce pan and added about 1 T of cinnamon, about 15 almonds, roasted then crushed, 1/2 vanilla bean. If you are using sweetened soy milk (most soy milk is sweetened) you do not need to add sugar.  After you pass the horchata through the strainer place it in the fridge to chill. Keep the pieces of vanilla bean and almond in the freezer once they are strained as they would be great in cookie dough or maybe even on ice cream. <br /><br /><span style="font-size: 1em;">Grilled Cactus</span><br />I have seen cactus leaves at Morse Market every time I stop in and never had a good excuse to pick them up until mentally prepping for taco night. This was my first time cooking them and I was amazed how gummy they are. They ooze out a liquid that reminds me of aloe when cut, which makes sense, but was odd witnessing it for the first time. I put a little olive oil on the first leaf and put it on the grill. I quickly learned two things, one is that the oil was not necessary as the aloe-like goo was ample to prevent it from sticking and made for a soggy, oily mess. The second thing that became apparent was I could not get the cactus leaves to stay down enough on the grill pan. This wouldn&#39;t be as big of a problem on a regular grill with a lid, but I persuaded the cactus to stay down with the help of a sauce pot. This worked perfectly and I put the other cactus leaves on the grill pan using the same method, but with no additional oil. <br /><br />

 Everything was ready around the same time and we laid out the spread on the counter. This was enough food to feed an army or have plenty of left overs.         <p>So, <a href="http://blogher.com">BlogHer</a> is next week. Which tempts me to simply say:</p><p>&quot;Move along, nothing to see here, come back the week of July 21st...or even the week of the 28th.&quot;</p><p>But in true obsessive blogger fashion I can&#39;t resist trying to keep up!!</p><p>So, I have a question for you. I&#39;ve been thinking about this since the weekend.</p><p>I find that typically I have one day during the weekend where I lounge about and don&#39;t do much. (By which I mean I sit with my laptop and probably try to catch up on email for a while, but I don&#39;t catch up on other chores.) And then I have one day filled with chores. Grocery shopping, laundry, taking out the recyclables, tidying up a bit...that sort of thing.</p><p>I have typically made chore day on Sunday, thinking it&#39;s better to relax more on Saturday. But this week I started thinking that maybe it would be better to move chores to Saturday, so it didn&#39;t feel like I was going back to work right on top of a day filled with chores.</p><p>What do you do? Thoughts?</p><p>As for eating this past Sunday-Thursday? nothing new and interesting to report. one night at dinner I ate some celery and I ate some grapes. And I thought, it would be so nice if I had actually chopped these up and mad some kind of fancy salad with them...that would be great to report on Veggie Goes Vegan.</p><p>But no.</p><p>I just ate some celery stalks. And ate some grapes.</p><p>I&#39;ve also been enjoying the nectarines and plums that are in season. I discovered that one of my friends, who has a plum tree, actually does canning, when she brought me some plum conserves. Complete in Ball Jar. I looked at her as though she was a stranger. Who is this woman who cans? Or jars. </p><p>Plum conserves, by the way? Quite yummy. especially on Vanilla Soy Ice Cream.</p><p>That is all.</p><p>We&#39;ll see when I can post again...conference crazy time is upon us!!!<br /> </p>   <p style="clear:both;">

        <p>Last week I was in a ravioli-making frenzy. I ate raviolis five nights in a row. Five. Count them. I&#39;m on what they call the anti-South Beach diet. :) This carb loving girl never says no to fresh pasta. What brought on this carb loading you ask? Well it all started with a simple tiny little unassuming bag of flour. 00 flour (super duper finely milled) to be exact. Most pasta recipes I&#39;ve seen ask for 00 flour, but since it&#39;s not easily or readily available, I normally substitute with all purpose flour. Since I was all stocked up on the good stuff, now was time to see what all the hype was about.</p><p>It was love at first knead. The flour is baby powder soft and absorbs the liquid in a flash. I used the proportion of one cup of flour to one egg. A few teaspoons of water helped bring it all together. I gave the dough about 30 minutes for the glutens to relax and rolled it out as thin as possible. I cut out rounds using a large biscuit cutter and then I set everything up assembly line style. </p>

I love mine creamy with a punch of flavor, so the first night we did the classic spinach and ricotta.&#160; Even though it would have been perfectly delicious with just butter and Parmasen cheese, I added some sauteed Opo squash, red chili pepper flakes and flat leaf parsley.<br /><br />

I topped it with a quick heirloom tomato sauce.         <p>You may have noticed I&#39;m a creature of habit. I hope I haven&#39;t just started a new one.</p><p>Now, whenever I got to Whole Foods down my way in the South Bay and have need of a dessert, I pick up the Black China Bakery vegan chocolate cake. It&#39;s dense and rich. This is the Bakery that made my wedding cakes. I love this cake.</p><p>It has always disturbed me that when I go to buy cakes up near my office for office birthdays, they don&#39;t carry the Black China cake. Instead they carry a vegan cake with a bunch of fruit on top made in their own bakery, and in my opinion, severely lacking.</p><p>Until yesterday, when i saw a new breed of vegan cake in the Whole Foods bakery case: A Vegan Mousse Cake.</p><p>And it was yummity yummy.</p><p>Oh noes! Must. Not. Seek. Excuses. To. &quot;Need&quot;.         <p>Yes, Wednesday I spent 12 hours, literally, sitting at my computer, barely getting up to go to the bathroom and fix some food and occasionally take a phone call from my couch, not my chair.</p><p>Before you lecture me: Yes, I realize that is bad for me. Stretching=good. Regularly walking around=good.         <p><a href="http://blogher.com">BlogHer</a> starts 2 weeks from Friday. But the whole week is pretty much shot. 2 weeks from today we&#39;re having a sales offsite. 2 weeks from tomorrow we start activities with the speaker training, editor meet-up and newbie mixer.</p><p>It&#39;s crunch time.</p><p>And whereas some people might lose their appetite and therefore some weight during such stressful times, I am not some people. Clearly.</p><p>Sigh.</p><p>So in the past four days I cooked one big mess o&#39; [Whole Wheat because the S.O. decided he doesn&#39;t like the rice pasta all that much] Spaghetti and Meat[less] Balls, which I ate over two days.</p><p>And I went out to and also ordered Chinese food, which I also ate at multiple meals over two days.</p><p>Can you guess the other things on my menu over the alst four days? If you guessed:</p><p>Some Organic Cereal with Rice Milk<br />Soy Lattes<br />Vegan Scones<br />Cashews<br />Diet Coke<br />and a Burrito</p><p>You would be right.</p><p>Sigh. Even I bore me.</p><p>Bear with me...I promise I&#39;ll start cooking interesting things again after BlogHer. If I survive it.<br /> </p>   <p style="clear:both;">
