<p>These were taken around Easter, 2008&#160;in North Fort Lauderdale, Florida.&#160; Only now getting around to uploading them.&#160; Truthfully, while it is hard to complain about being at the beach, I really prefer the Gulf side of Florida.&#160; The beaches are much nicer and the trade winds a little more mellow.&#160; Maybe it was just the time of year but the trash line was indeed filled with trash, jelly fish, and man-o-war.&#160; I&#39;ve never seen so many used straws.&#160; As for the town, I just felt like I was in a big city rather than an island feel I get from the Fort Myers area. The Hallendale Pier area is funky-sort of an old boardwalk with little pizza shops and tourist gift shops.&#160; Lots of interesting people from the world.&#160; </p>
<p>The first photo was the first day of our vacation and taken from our deck in the condo rental.&#160; Not a bad way to start the day!&#160; The sun from our home is rising below the&#160;tree line so there isn&#39;t much to see here in NE Ohio in the mornings.&#160; I sure hope the sun shines a little on all the people in the Midwest who need a break from all the flooding.</p>   <p style="clear:both;">

        <p>Each Easter one can hear the same questions from children, that adults usually can’t answer. What has bunny to do with the religious holiday of Easter? And why Easter Bunny lays eggs anyways? Usually adults don’t know what to say and joke their way out.</p><p>Yet, if we go back in history, there are several explanations. In the archives of my local web analytics company, I found one story that is worth mentioning. The origin of Easter Bunny as well as the word “Easter” comes from the&#160; pre-Christian customs honoring the fertility goddess Eostre of old German tribes, including Anglo-Saxon ones. According to popular folklore, Eostre once saved a bird whose wings had frozen during the winter by turning it into a rabbit. Because the rabbit had once been a bird, it could still lay eggs. As it happens a lot with old lore, that rabbit in the end became the modern Easter Bunny.</p><p>This legend arrived to the United States with German immigrants and Amish somewhere in the eighteenth century.&#160; These guys were telling their children stories about bunnies, although very often in their stories the rabbit laying eggs was replaced with a hare. </p>   <p style="clear:both;">

        <p>So who knew you could enjoy doing laundry?&#160; But it&#39;s been 2 1/2 months since I could wash my own clothes.&#160; Finally, a free Saturday to do the ordinary things of housekeeping.&#160; And &quot;back to normal&quot; is feeling pretty good right now.</p><p>So why the 2 1/2 month vacation?&#160; I went in for a &quot;minor&quot; surgery back in March.&#160; Actually, it was to look for return of a major serious disease (another story for another day...), but the procedure should have been a day, &quot;bandaid&quot; surgery.&#160; The news after the surgery was good, very good.&#160; The doctor was very thorough with his laparascope, and found no evidence of the disease.&#160; So we came home, rejoicing, and had a quiet afternoon.&#160; I had just sent my husband to the computer to send a big email announcing the good news to friends and family who were concerned and praying for me, when I started having a strange pain just under my ribs.&#160; Just as he was about to hit &quot;send&quot; to tell our good news, I was calling him to tell him that I felt awful.&#160; So after a while, off we go to the emergency room.&#160; The doctor was mystified because the procedure had been a simple one that he&#39;s done hundreds of times.&#160; They ruled out a few things and offered to send me home or let me stay, my choice.&#160; I chose to stay because I could tell nothing was getting better, even with some nausea meds they&#39;d given me.&#160; So they put me in a room and the doctor said he&#39;d be back at 7 the next morning.</p><p>The next few hours are a blur, but I think they were spent with me dozing in a room and my sweet husband standing over me watching.&#160; Next thing I was really aware of, I was on a gurney outside an operating room, my doctor pacing, and he said we were waiting for the anesthesiologist to get there.&#160; They would do surgery again to figure out what was wrong.&#160; He&#39;d gone home, couldn&#39;t sleep, and finally scheduled an OR and came back to the hospital, not wanting to wait until morning.&#160; I think my vital signs were also getting iffy, so that&#39;s where we ended up by about 4 a.m.</p><p>I did wake up enough at this point to realize that I had a very worried doctor and my husband was being very chipper, which is a bad sign.&#160; He&#39;s really a pessimist and a worrier, but when things are <em>really</em> bad, he has this forced optimism that comes out.&#160; Sort of opposite day all the time when you live with him, you know?&#160; But I think that for all that his habit is to see the glass half empty, when it came to something possibly seriously wrong with me, it&#39;s too unthinkable for him to hold his usual view of things.&#160; Or he was trying to keep me from being afraid.&#160; Suddenly it occurred to me - what if this was something that I <em>wouldn&#39;t</em> pull through?</p><p>Now I don&#39;t know what I would have expected myself to think about in my dying moments, but I surprised myself when it dawned on me that I might be there.&#160; I&#39;m very confident of my own relationship with God, and felt no fear.&#160; I was trying to recall from all my Bible study whether I would get a chance to intercede for other people after I got to heaven, and I was thinking probably not, although Christ always intercedes for us.&#160; So, I had certain loved ones on my mind that I was reminding God real quick that <em>they</em> need to get right with Him, and sort of asking Him if I could maybe stick around to see them safely into the kingdom, but I was really ok if I couldn&#39;t as long as He&#39;d hear my final prayer for them.&#160; Anyway, not what I would have expected.</p><p>So, I obviously woke up, after they discovered that my intestine had been cut during the laparascopy that morning, and repaired it.&#160; I had a huge abdominal incision and a nasty tube in my nose pumping my stomach constantly.&#160; This was only the beginning of the fun.&#160; The tube stayed in for 4+ days.&#160; No food or drink for 6 days total.&#160; Just IV fluids.&#160; Now that is an experience.&#160; Interesting thing, though.&#160; It was Easter weekend.&#160; I had watched a Discovery channel special about Jesus that explored all kinds of things about His life and about crucifixion and things like whether He really could have had sweat like drops of blood.&#160; It wasn&#39;t a religious program at all, but so many things from it came to my mind during my 6 day fast.&#160; Now this doesn&#39;t sound like something that everybody will want to run out and experience, but I spent Easter weekend contemplating just what Jesus went through for us, completely voluntarily.&#160;&#160; He fasted 40 days and nights (I can&#39;t even imagine).&#160; Did you know that you stop salivating after a while?&#160; It takes days to get that back to normal, so eating is challenging and not terribly pleasant even after you start again.&#160; (And coffee tasted really bad for a while - I do love my coffee.&#160; Kept sending my Mom to find another pot around the hospital to try.)&#160; The Discovery channel show talked about how you really can sweat blood if you&#39;re going through something of an extremely stressful nature, I mean <em>extremely</em>.&#160; Again, He volunteered.&#160; So instead of hearing beautiful Easter music and getting to wear a great-looking suit I&#39;d bought, I really contemplated Christ instead.&#160; Which had its own strange beauty.</p><p>And then there were the blessings that continued to pour in.&#160; My 23-year-old autistic nephew (6&#39;2&quot;, strong, handsome) brought me a stuffed Easter bunny.&#160; People sent and brought flowers until my room gave people hay fever.&#160; I had asked for very limited visitors because the nose tube and all...&#160; And I was definitely having some bad hair days.&#160; But just the right number of friends ignored that and came anyway.&#160; It was as if I had a social secretary who knew my needs better than I did - they came at just the right times and with just the right words.&#160; My sweet doctor came often, feeling terrible about his part in the problem, but I also knew that he&#39;d saved me after the fact by not going to sleep and staying home.&#160; And stuff happens, even when you&#39;re a gifted surgeon, I understand that.&#160; My kids showed up and encouraged me and brought things that were so typical of each one of them.&#160; My mother stayed much of the time, and she could be quiet and just be there without requiring anything of me.&#160; And the nurses and aides were incredible - what a calling.</p><p>So back to the laundry.&#160; Because of the incision, I was told not to lift more than 10 lbs., and was told that pulling wet clothes out of the machine is on the &quot;no&quot; list.&#160; Just as I should have been getting better, another setback occurred.&#160; And then the dryer broke (now we&#39;re into everyday aggravations).&#160; So folding warm fragrant clothes is something I guess I&#39;ve taken for granted.&#160; And I&#39;m sure I will again.&#160; But for this weekend, I&#39;m celebrating the ordinary.<br /> </p>   <p style="clear:both;">

        <p>This past spring break, I want to New York for a school trip! And I fell in love multiple times - with objects, people, restaurants, etc.! One of my loves was La Maison du Chocolat, what else, a French chocolate shop! Irresistible and delicious!</p><p>Ce printemps dernier, je suis allée au New York pour un voyage université. Et je suis tombée amoureuse plusieurs fois - avec les objets, les gens, les restaurants, etc!. Une de mes amours, c&#39;était La Maison du Chocolat, quoi d&#39;autre, un magasin chocolat français! Irrésistible et délicieux! </p><p>這過春假，我跟學校一起去纽约。我發現一個商店我特别喜歡 － La Maison du Chocolat, 一个法國巧克力店. 非常好吃跟可愛! My mom would come back from the grocery store with a bag filled with a double layer of 8 hot crossed buns. We&#39;d heat them up in the oven for a few minutes and then eat the warm  buns for breakfast. The only thing I hated about the buns was that they were always studded with candied fruit, which I&#39;d pick out and leave on my plate in a little heinous pile. Candied fruits are the roots of all evil and I had no idea why someone would sully a perfectly good treat with those little bites of raunch.</p><p><a href="http://farm3.static.flickr.com/2210/2353088538_b9f832557e.jpg"><img alt="" src="http://farm3.static.flickr.com/2210/2353088538_b9f832557e.jpg" style="margin: 0px auto 10px; display: block; text-align: center; cursor: pointer; width: 320px;" /></a><br />I haven&#39;t had a hot cross bun in years and while strumming through an old <a href="http://farm3.static.flickr.com/2369/2352261437_f4511b236c.jpg">Betty Crocker kid&#39;s cookbook</a> that I had thrifted ages ago, I came across a perfect recipe. Why was it so perfect? Well, truth is, <a href="http://everybodylikessandwiches.blogspot.com/2007/03/eeek-meme.html">I&#39;m intimidated</a> by <a href="http://everybodylikessandwiches.blogspot.com/2007/03/i-had-beer-and-now-i-have-bread.html">baking with yeast</a>. I don&#39;t know why, but somehow I associate baking bread with serious devotion....an undertaking I didn&#39;t feel quite ready to tackle. Until now. I mean, this recipe is meant to be made by children, so really, how hard can it be? I felt perfectly at home trying this recipe instead of <a href="http://www.deliaonline.com/recipes/hot-cross-buns,1419,RC.html">one I had been eying for years</a> which seemed too complex and frightening for a newbie like me.</p><p>For a greenhorn, I chose right. It may not be as authentic as Delia&#39;s, but my hot cross buns were delicious (my husband called them delectable) and I was able to get over my fear of baking with yeast in one fell swoop. They were light and crispy on the outsides just out of the oven and the icing I doctored with vanilla and cinnamon was the perfect accompaniment. Plus, the best part was that I subbed out those nasty candied fruits with fresh orange zest to wonderful effect! The fruity orange essence was present without those god-awful bitter vile beasties. Oh yah, let my bread baking adventures begin! It&#39;s on, bitches.</p><p><a href="http://farm3.static.flickr.com/2087/2353088716_5dde0725b5.jpg"><img alt="" src="http://farm3.static.flickr.com/2087/2353088716_5dde0725b5.jpg" style="margin: 0px auto 10px; display: block; text-align: center; cursor: pointer; width: 320px;" /></a><br /><span style="font-weight: bold;">hot cross buns with cinnamon icing</span><br />1 c warm water (not too hot)<br />1 pkg. active dry yeast<br />2 T sugar<br />2 1/4 c flour<br />1 t salt<br />1 1/2 t cinnamon<br />2 pinches nutmeg<br />1 egg<br />2 T butter, softened<br />1/2 c raisins<br />zest from 1 orange</p><p>icing:<br />2 heaping T icing sugar (powdered sugar)<br />a drop or two of milk<br />1/2 t vanilla<br />1/4 t cinnamon</p><p>1. In a mixing bowl, disolve yeast into water and stir in sugar. Wait until the yeast doubles in volume (this is called proofing the yeast - if it doesn&#39;t, you&#39;ve got bum yeast. Try again with another packet). Stir in half of the flour, salt and spices. Add in egg and butter and mix well. Add in rest of the flour along with the raisins and zest and beat until smooth. Scrape down the sides of the bowl and  cover the bowl with a cloth, letting rise in a warm place until doubled in size, about 30 minutes.</p><p>2. Oil up a large muffin tin and set aside. Stir down the batter and spoon dough into prepared muffin cups filling half full. Cover tin with cloth and let rise until doubled in volume, another 30 minutes. Heat oven to 400 degrees and bake for 15 minutes or so until golden brown. Remove from oven and let cool on a wire rack.</p><p>3. Prepare frosting by mixing together icing sugar with a few drops of milk and vanilla. Stir in cinnamon, adding another droplet of milk if necessary to get a smooth, creamy consistency. When buns have cooled, use a spoon to drizzle icing over the buns forming a cross. Place on a plate to catch any drippings.</p>   <p style="clear:both;">

Divide the dough as follows: 1/3 + 2/3.</span><br /><span style="color: rgb(204, 102, 204);font-family:trebuchet ms;">3. Take 2/3 of the dough, roll it in order to get a  40cm (16 inches) lon</span><span style="color: rgb(204, 102, 204);font-family:trebuchet ms;">g rope.</span><br /><span style="color: rgb(204, 102, 204);font-family:trebuchet ms;">4. Cut this rope into 20 equal pieces.</span><br /><span style="color: rgb(204, 102, 204);font-family:trebuchet ms;">5. Form a rope with each piece and shape into a coil.<br />6. Place each coil on the body of the lamb.<br />7. Then, with the leftover dough (1/3) make 2 ears, 2 legs and a head. Remember me?  I used to be really good about blogging almost everything I make.  I still take pics of what I cook, but sometimes life gets in the way.  I started a new job baking 3 days a week.  I still have my other job cooking for the Seniors.  I was really sick 2 weeks ago and then I went to FL for 9 days.  I&#39;m back now, ready to blog. </p><p>Robin really loves Hot Cross buns, but she said she&#39;s never had a really fresh one( she always has to toast them).  I remedied that, by whipping up this recipe.  I searched online, but then went to my massive cookbook collection and pulled out <a href="http://www.amazon.com/Bread-Lovers-Machine-Cookbook/dp/155832156X/ref=pd_bbs_sr_1?ie=UTF8&amp;s=books&amp;qid=1206303799&amp;sr=8-1">a bread machine cookbook</a>. I really have no qualms about making dough in the machine, especially when I&#39;m making 3 other things too.  I decided on this recipe because it used skim milk( I didnt want to go out and buy whole milk) and I had everything on hand.  Actually, I take that back.  The recipe called for dried currants and dried apricots.  I had the latter, not the former.  I did have a mix of dried fruits(breakfast blend) by Sunsweet.  It contained dates, 2 different raisins and prunes so I used that.  It worked out well. The dough was super simple using AP flour, brown sugar, mace( I used a shake of pumpkin pie spice) eggs, butter, milk, yeast and salt.   When the dough cycle is finished, you dump out the dough and knead in the dried fruits.  After forming into rolls, you let rise again, slash the top and bake.  After they were in the oven for about 5 min, I realized I forgot to slash the crosses into the top( Hey, I&#39;m Jewish, I dont often make crosses).  I hoped it would still work and it was fine.  I just mixed up the glaze( powdered sugar, milk and vanilla or <strong>Fiori Di Sicillia</strong>).  I let them cool for a few minutes then made the crosses by drizzling them on with a spoon.  It worked out pretty well.  Everyone loved them!!  On my way back to Canada from the airport( in Detroit) last week, I stopped at <a href="http://www.ninosalvaggio.com/">Nino Salvaggio&#39;s</a><br />and picked up some Vermont Butter and Cheese Company Cultered Butter.  It was divine on these.  </p><p>I also made a smoked salmon, mushroom and asparagus quiche( The crust is Pate Brise, I subbed 1/4c. of WW flour in place of some of the AP flour)and roasted fingerling potatoes.  I love these potatoes.  I picked up a bag at our local grocery store( PC Brand) for 1.50.  I&#39;m always stunned when I can find gourmet stuff in our small town.  </p><p>I didnt get a picture of the fabulous yogurt granola parfaits I made.  I used <a href="http://www.liberte.qc.ca/en/page.ch2?uid=Yogurt">Liberte </a> organic vanilla yogurt.  OMG, that stuff is TOO DIE FOR!!  Robin said it was like eating heavy cream.  I normally always look at labels( and prices) at the grocery store, but for some odd reason( subconciously maybe I didnt want to know) I didnt.  I was shocked to see it had 15g of fat for 175g serving.  It was also 4.79 for 750g.  When I made the parfaits, I used probably 2 heaping tablespoons of the yogurt so I didnt feel too guilty.  I also used some blackberries( from Mexico) and some semi tasteless strawberries from Cali.  I really can&#39;t wait until we have Ontario strawberries.  Those rock and last year I made a killer jam with them.  </p><p>No big meal tonight.  I&#39;m going to have some blintzes my mom made for me and I schlepped back from Florida!!</p>   <p style="clear:both;">

I worked Thurs-Saturday preparing for a wedding. Yesterday was the actual wedding and I&#39;m always exhausted when I get home. Standing on my feet and serving chicken cordon bleu with a choice of mushroom sauce or chipotle cream sauce ( and asking each person what they want and then explaining over and over what chipotle is) wears me out, not to mention the loading and unloading at the actual wedding site.   Anyway, I cooked a bunch of things last Wednesday in preparation for today. </p><p>I did throw this foccacia dough together yesterday morning.  This is the best damn foccacia I&#39;ve ever made.  The recipe comes from August 2004 of Fine Cooking and its Peter Reinhart&#39;s recipe( Bread Bakers Apprentice).  It&#39;s a very wet dough that spends the night in the fridge for a long slow rise.  The next day, you dump it on a parchment lined pan, dimple it and add more olive oil.  Then it rises again for a few hours until its ready for the oven.  It was so flavorful from the long overnight rise. My MIL stays away from marinara sauce, so I made her a smaller lasagna with bechemal.  I used the bechemal sauce from the latest issue of Cook&#39;s Illustrated.   For Robin and I, I made a big batch of homeade marinara using San Marzano tomatoes that Robins friend brought us back from an Italian market in Windsor, ON.   I used some bechemal on the bottom as well. I loved this hot fudge, it will be my go to recipe from now on.  I had bought some Hershey&#39;s single origin choc. bars that were reduced and they were perfect for this recipe.  I threw together and ice cream pie using a ready made keebler crust and bryers light heath bar ice cream.   </p><p>I also made a blueberry/raspberry pie for my MIL.  I used the pillsbury crust and I swear I&#39;ll never do that again.  I HATE the smell of them.  They stink while they are baking( I know its the lard in the crust). <p>Here are my boys enjoying the treats the Easter Bunny left for them!&#160; They both had a nice Easter morning, they got little treats and toys and MINIMAL candy!&#160; The biggest hits were Freddie&#39;s Star Wars coloring book and lightsaber - great job Easter Bunny! </p>

<p>Later we went to visit family at their house - Fred&#39;s mom and brother, his wife and their kids.&#160; The kids had fun opening Easter stuff from Grandma (more lightsabers, lol!), then we went out back and let them hunt for eggs.&#160; After that we took advantage of the nice weather and took them all to the park, which was fun for all of us! </p>

<p style="margin: 0.0px 0.0px 0.0px 0.0px; font: 12.0px Helvetica">&#160;<span class="Apple-tab-span" style="white-space:pre">	</span>Easter in Finland has several traditional foods. &#160;One goes by the name Memo, a mixture of rye flour, water, and molasses that&#39;s baked and served cold with cream a sugar. &#160;It looks like crap, and many say it tastes the same, though it tasted <em>interesting</em> - I actually enjoyed it.&#160; Something completely new.&#160; The other main specialty is &#160;pronounced &quot;Pasha,&quot; &#160;a mixture of several&#160;creamy&#160;cheeses, sugar, and dried fruit that&#39;s spread on dessert buns. &#160;Delicious. &#160;Boiled eggs and ham are also a must on easter.&#160; Knowing my dislike for boiled eggs, my host grandmother switched my &quot;boiled egg&quot; out for a chocolate-filled egg (real egg shell!).&#160; Waiting till the end of the meal, she sat the entire time waiting for me to finally crack the egg, which I&#39;d saved to last. She even prodded me about it, asking if I liked boiled eggs, and why I didn&#39;t eat it.&#160; One should always have boiled eggs on Easter, you see.</p>
<p style="margin: 0.0px 0.0px 0.0px 0.0px; font: 12.0px Helvetica"><span class="Apple-tab-span" style="white-space:pre">	</span>I hit the All-American Car Show last month.&#160; How ironic that my first real car-show in recent memory turned out to be in Finland.&#160; I&#39;ve just seen Mark Knopfler&#160; for free too......(the guitarist from &quot;Dire Straits&quot;).</p>
<p style="margin: 0.0px 0.0px 0.0px 0.0px; font: 12.0px Lucida Grande"><span style="font: 12.0px Helvetica"><span class="Apple-tab-span" style="white-space:pre">	</span>One of the coolest events that I&#39;ve been too was this years swedish-speaking Student&#160;Parliament. &#160;This body politic controls the &quot;</span>Finlands Svenska Skolungdomsförbund,&quot; a student organization for swedish-speaking students in Finland. &#160;No equivalent of this student organization exists in the US - it&#39;s completely democratic, has money, and actually influences political&#160;decisions. &#160;The best part is that any swedish-speaking student can be a part of the parliament, including exchange students. &#160;I pride myself in the fact that I was one of the more vocal members, despite the language barrier. &#160;Fantastic Experience. &#160;Someone told me that my Swedish accent is &quot;legendary, like one sees in movies.&quot;&#160; What that means, and whether it&#39;s a compliment I submit for debate. &#160;</p>
<p style="margin: 0.0px 0.0px 0.0px 0.0px; line-height: 13.0px; font: 12.0px Lucida Grande"><span class="Apple-tab-span" style="white-space:pre">	</span>I just returned from the St. Petersburg trip, which was one of the most amazing cities I&#39;ve ever been to. &#160;I&#39;ve never seen anything like it. &#160;Palaces sat next to abandoned, or run-down buildings. &#160;Such riches and such poverty. &#160;</p>
<p style="margin: 0.0px 0.0px 0.0px 0.0px; line-height: 13.0px; font: 12.0px Lucida Grande">There&#39;s nothing like that in the US.&#160; Since the USSR collapsed, Russia has put a lot of money into the old palaces and churches that had gone to pot under the Soviets.&#160; Very little money has gone into repairing and building &quot;normal&quot; buildings, which is why such a strong contrast exists in St. Petersburg, and Russia in general. &#160;</p>
<p style="margin: 0.0px 0.0px 0.0px 0.0px; line-height: 13.0px; font: 12.0px Lucida Grande"><span class="Apple-tab-span" style="white-space:pre">	</span>Rotary took us on a whirl-wind tour. &#160;They packed as much as possible into our two full days in St. Petersburg.&#160; We ran through the Hermitage in one hour.&#160; Unbelievable - one hour in one of the world&#39;s three greatest museums.&#160;</p>
<p style="margin: 0.0px 0.0px 0.0px 0.0px; line-height: 13.0px; font: 12.0px Lucida Grande"><span class="Apple-tab-span" style="white-space:pre">	</span>We also watched a ballet whose name I can&#39;t pronounce.&#160; We thought that it ended after the 2nd act, and went back to the busses only to be told that the 3rd act started soon.&#160;</p>
<p style="margin: 0.0px 0.0px 0.0px 0.0px; line-height: 13.0px; font: 12.0px Lucida Grande"><span class="Apple-tab-span" style="white-space:pre">	</span>On Sunday, Rotary treated us to a show of traditional Russian folk music in an incredible rococo-style building. &#160;Earlier, during our &quot;free time,&quot; &#160;I went, along with almost everyone else to an incredible church. &#160;Its entire interior had been decorated with mosaic - no small undertaking.&#160;</p>
<p style="margin: 0.0px 0.0px 0.0px 0.0px; line-height: 13.0px; font: 12.0px Lucida Grande"><span class="Apple-tab-span" style="white-space:pre">	</span>Sadly, that was the last time I&#39;m going to see a lot of those exchange students as I&#39;m not attending the Euro Tour. &#160;On the positive side, I know have free places to stay throughout most of europe.</p>    <p style="clear:both;">
